Healthiest Cookies Ever

On Saturday night I made the tastiest healthy cookies ever, as you may recall. I forgot, however, to follow up with a review and a legitimate recipe for them. I give full credit for these cookies to Pinterest.

Let me preface this recipe by saying that if you are expecting regular old fatty sugary cookies, these are not going to be the identical but healthy replacement for them. That’s like expecting spaghetti squash to be an exact replacement for pasta. Spaghetti squash is delicious, but it’s no pasta. The same goes for these cookies. If you want a delicious, healthy, FILLING sweet snack then these are the cookies for you. Please enjoy them as much as my classmates and I did! (Sorry, I forgot to take a picture and shamelessly used the one from Pinterest.)

Healthiest Cookies Ever

  • 1 cup quick cooking oats
  • 2 bananas, mashed
  • 3 packets Truvia
  • 1/4 cup dark chocolate chips (optional)

Preheat your oven to 350*F. Mash bananas and add oats and Truvia to them, stirring until fully incorporated. It’s okay if your bananas are still a little chunky, they give the cookies nice texture. Stir in the chocolate chips. Using a tablespoon, drop heaping spoonfuls of dough onto a baking pan lightly sprayed with PAM. Form into slightly flattened mounds on baking tray. Bake for 12-15 minutes. Cookies should be chewy and moist on the inside.

You’re welcome to add in anything else that sounds tasty, dried fruits and nuts would be delicious! And the best part is, if you eat half the batch in one sitting you don’t have to feel guilty because it’s just oats and bananas :)
